Fine Ground Sea Salt Almond Flour Crackers paired with Simple Mill’s recipe for Creamy Pomegranate Pistachio Dip will have you wanting to try it with all the different flavors of Simple Mills crackers.

Creamy Pomegranate Pistachio Dip
1 cup plain Greek yogurt
2 tbsp chopped mint, plus more for garnish
1/8 cup chopped green olives
1/8 cup chopped toasted pistachios, plus more for garnish
1/4 cup pomegranate seeds, plus more for garnish
1/4 tsp onion powder
1/4 tsp minced garlic
1/4 tsp cumin
Salt and pepper, to taste
Cayenne (optional)
Olive oil, to taste
1 box Simple Mills Almond Flour Crackers
1 box Simple Mills Sprouted Crackers

Instructions:

Mix Greek yogurt, chopped mint, olives, pistachios, pomegranate seeds, onion powder, minced garlic and cumin in a small bowl. 
Taste and season with salt, pepper and cayenne (if using).
Transfer to a serving dish and garnish with more fresh mint, pistachios, pomegranate seeds and a drizzle of olive oil.

Tips:
To toast pistachios, preheat oven to 350ºF. Transfer pistachios to a baking dish and toast for 5-7 minutes or until light brown and fragrant.

Cauliflower Hummus

4 cups roasted cauliflower florets, plus more for garnish
1/4 cup tahini
2 cloves of garlic
2 tbsp cold water
2 tbsp lemon juice
1 tbsp olive oil, plus more for garnish
1/4-1/2 tsp salt
Black pepper, to taste
Simple Mills Rosemary & Sea Salt Almond Flour Crackers
Sunflower seeds, for garnish
Fresh parsley, for garnish

INSTRUCTIONS:
Add roasted cauliflower, tahini, garlic, water, lemon juice, olive oil and salt to a food processor or a blender. Blend until smooth. Season with pepper, to taste.
Garnish with small roasted cauliflower florets, a drizzle of olive oil, sunflower seeds, chopped parsley and a crack of pepper.
Serve with Simple Mills Rosemary & Sea Salt Almond Flour Crackers.

Tips:
To make roasted cauliflower, season florets with a sprinkle of salt and pepper and roast on a baking sheet at 400ºF for 30 minutes or until soft.

Paleo Pumpkin Hummus (Legume Free)

One 15oz. can of artichoke hearts in brine, drained and liquid reserved
1/2 cup canned pumpkin
One clove garlic
1/4 cup tahini
2 TBSP fresh lemon juice

3/4 tsp. sea salt
Ground paprika, optional

INSTRUCTIONS:
Place all ingredients in a metal mixing bowl or food processor and blend until smooth, adding a little of the reserved artichoke liquid if needed to thin the hummus to the desired consistency.
Spoon into a serving bowl, and refrigerate to chill (an hour or two, up to a few days).
Drizzle with high–quality olive oil and a sprinkle of paprika. Serve with assorted Simple Mills crackers and veggies to complete your paleo hummus platter!

Cinnamon and Sugar Pumpkin Fluff – pair with pumpkin to make this fun and fluffy dip. Enjoy on almond flour crackers or sprouted seed crackers.

1 block organic cream cheese, softened
2 tbsp Simple Mills Pumpkin Muffin Mix
2 tsp. gluten-free vanilla extract
4 tbsp coconut sugar
½ tsp. ground cinnamon

INSTRUCTIONS:
Add all ingredients in a mixing bowl
Beat until smooth and fluffy using a stick blender or hand mixer (about 30 seconds to 1 minute).
Store leftovers refrigerated in an air-safe container for 1-2 days.

TIPS:
Alternate Ingredients:

1 block organic cream cheese, softened
1/2 cup pumpkin purée
2 tbsp maple syrup
3 tbsp coconut sugar
1 tsp pumpkin pie spice
