Ingredients:

  • 8 ounces elbow macaroni
  • 3 tablespoons butter
  • 3 tablespoons flour
  • 3-1/2 cups milk
  • 1/2 medium white onion
  • 1 bay leaf
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • Pinch of cayenne
  • 3 tablespoons finely chopped black truffles
  • 10 ounces sharp aged white cheddar, grated
  • 3 ounces Gruyère cheese, grated
  • 1 ounce Parmesan cheese, grated
  • 2 drops black winter truffle oil
  • 3 tablespoons butter
  • 1 cup brioche breadcrumbs
  • 2 tablespoons chopped parsley
  • Sliced fresh black truffles for garnish (optional)

Instructions:

  • Preheat oven to 350 degrees F. Cook the macaroni in boiling salted water until al dente, then strain and set aside.
  • In a separate pot, melt butter and whisk in flour over low heat. Cook for 4 minutes, then add milk, chopped truffles, onion, and bay leaf. Simmer for 10 minutes, then remove onion and bay leaf.
  • Turn off the heat and add 3/4 of the aged cheddar and all other cheeses. Season with salt, black pepper, and truffle oil. Fold in macaroni and pour into a casserole dish.
  • Top with remaining cheddar. Melt butter in a sauté pan and toss breadcrumbs and parsley to coat. Sprinkle over the macaroni.
  • Bake for 30 minutes, then let it stand for 5 minutes before serving. Garnish with fresh shaved black truffles if desired.

Prime Mini Burgers

Ingredients:

  • 3/4 pound prime ground beef
  • Pinch of kosher salt and freshly ground black pepper
  • 4 tablespoons extra-virgin olive oil
  • 12 small slices of cheddar cheese
  • 12 mini sesame brioche buns
  • Remoulade (see recipe below)
  • Arugula leaves
  • 6 cherry tomatoes, sliced
  • 3 cornichons, sliced

Instructions:

  • Preheat grill or grill pan. Season ground beef with salt and pepper, then form into small patties.
  • Drizzle patties with olive oil and grill for 3 minutes on each side. Place cheddar cheese slices on top to melt.
  • Toast buns on the grill for 2 minutes. Assemble burgers by placing remoulade on the bottom bun, followed by a patty, arugula, tomato slices, and cornichons.
  • Secure with a toothpick and serve immediately.

Remoulade:

Combine 3/4 cup Thousand Island dressing with 2 tablespoons barbecue sauce and diced red onion.
