Inniskillin Icewine is made from frozen grapes at the height of Canada’s crisp winter. The majority of icewine produced in the world comes from Canada, since icewine depends on consistent, reliably cold temperatures.
The grapes, which reach full peak in October, are left untouched on the vines under a cloak of protective netting of the deep freeze of the Canadian winter. What happens is the grapes are naturally dehydrated by the elements, leaving a beautiful concentration of flavors, aromas sugars and acids. Then, when the temperature drops to a frigid -10ºC (14ºF) in December and January, the grapes are arduously harvested.
At that point, most of the water is crystallized out. Only a small amount of the concentrated nectar can be squeezed from each bunch, yielding about a tenth of the liquid, with all the concentrated sweetness, acidity, and flavor. It’s basically a grape “super juice.” The juice is then slowly fermented at a temperature of 15ºC (59ºF) to achieve a rich, specialty wine know as Icewine.
But if you think it’s too concentrated, it’s not. Most icewines are lighter than you’d expect, with a pure, sort of nicely-sweet freshness, with a range of florals, berry fruit notes, and the right touch of acidity.
