Fiamma is no stranger to upscale dining. New York restauranteur Stephen Hanson brought his fabulous eatery, which means "flame" in Italian, to Vegas all the way from NYC’s SoHo in August 2003, where it earned the Three Star designation from The New York Times.
Joining the MGM Grand was a no-brainer for Hanson, who says that the hotel "epitomizes the best Las Vegas has to offer".

Chef Carlos Buscaglia approach to his menu is the same; items such as the fresh Mozzarella are actually flown in fresh from Campania, Italy. Buscaglia makes frequent trips to Italy to seek out the best ingredients for his dishes. He goes to such great lengths as to hunt down the best white truffles using canines. With such devotion, Fiamma’s great success and sheer perfection is no surprise. The greatest thing about Fiamma is simply their dedication to the art of creating great Italian food and an equally great overall dining experience.
