Take in the room’s cool, fresh colors that echo the purity of the deep ocean, the walk-in wine cellar surrounded by water, and the cutting-edge open kitchen as you savor the chef’s handiwork.

And what masterpieces you’ll feast on. Aquaknox’s extensive raw bar includes stone crab claws, oysters on the half shell, and ponzu oyster sliders; as with all the restaurant’s offerings, the fruits of the sea are flown in daily from all over the globe. Follow up your starters with an appetizer, a soup, or a salad, all featuring the freshest seafood. You can dine on a selection of caviars with traditional garnishes, hearts of palm and lobster salad, or sweet shrimp salad.

The main courses at Aquaknox continue the theme of excellence. New Zealand king salmon, jumbo Louisiana prawns, lobster, and whole fish are all grilled to perfection and served with scrumptious sides. The Aquaknox kitchen also shows off its searing skills with entrees featuring ahi tuna, grouper, and day boat scallops, or you can dig into Chef Moloney’s signature fish soup, a smorgasbord of lobster, shrimp, John Dory, mussels, and clams in saffron broth.

If red meat is more your thing, Aquaknox has you covered there too with flat iron steak salad and filet mignon. Aquaknox does fowl too, in the form of crispy duck breast or oven-roasted guinea hen.

And of course, you’ll have to finish it off with a decadent dessert. Fresh fruit, in the form of a cobbler or poached pears, is a healthy option, but this being Las Vegas, you’ll want to indulge in the trio of sorbets or brulees or maybe even the fondue for two. He picked up his skills by working under local and nationally renowned chefs. He spent 12 years with celebrity chef Wolfgang Puck, and in that time, he opened seven casual and fine-dining. He further developed his skills as a restaurant consultant, creating menus and supervising kitchens for world-class restaurant groups.

Chef Moloney now brings these skills to Aquaknox, where he’s assembled a selection of immaculate and elegant dishes using only the freshest ingredients available. Though seemingly straightforward, these preparations are the hardest to achieve. In these simple arrangements, the flavors, textures, and scents of the food have nowhere to hide.
