Even with my limited culinary skills (meaning I burned them in the broiler), the filets still came out flavorful, tender and juicy. The steaks came with a seasoning packet that brought out the intense smoky flavors of the beef. Needless to say, I am now a dedicated Kansas City Steaks devotee.

The secret is in the aging. They use a process referred to as "wet aging". This process allows the meat to naturally age, in a sealed Cryovac package in a climate controlled environment for up to 28 days. This allows the meat to marinate in its own juices, and become very tender.
