Las Vegas has spent years building one of the most ambitious dining scenes in the country. Now Michelin is officially paying attention again.
On August 26, the MICHELIN Guide unveiled its inaugural 2026 American Southwest selection during a ceremony at Fontainebleau Las Vegas, marking Michelin’s return to the city after a 17-year absence. The new regional guide covers Nevada, Arizona, New Mexico and Utah, with 64 restaurants representing 24 different types of cuisine making the complete Southwest selection.
Las Vegas emerged as the heavyweight when it came to stars. Four of the five Michelin-starred restaurants in the entire Southwest are located in Las Vegas, while the city received 24 Michelin distinctions overall.
For a destination that has transformed dramatically since Michelin last evaluated its restaurants in 2009, the new guide is more than a collection of awards. It is a fresh snapshot of what dining in Las Vegas looks like now, from extravagant French tasting menus on the Strip to Vietnamese cooking, barbecue, Chinatown favorites and independent neighborhood restaurants.
Restaurant de Joël Robuchon Takes Two Stars
The night’s highest distinction went to Restaurant de Joël Robuchon at MGM Grand, which received Two MICHELIN Stars, making it the only two-star restaurant in the inaugural Southwest guide.
Michelin singled out the restaurant’s contemporary French cuisine, luxurious dining room and highly polished progression of courses. The experience moves from an elaborate presentation of house-baked breads through dishes that might include crustacean gelée with crabmeat and caviar, roasted venison and other technically exacting preparations before finishing with a cart of mignardises.
The recognition also carries some history. When Michelin last rated Las Vegas, Joël Robuchon was the city’s sole three-star restaurant. Nearly two decades later, the restaurant once again sits at the top of Michelin’s Las Vegas hierarchy.
Three Las Vegas Restaurants Earn One Michelin Star

é by José Andrés, the tiny tasting counter hidden inside Jaleo at The Cosmopolitan of Las Vegas, was recognized for its imaginative Spanish contemporary cooking. The intimate experience combines serious technique with the theatricality that has long defined José Andrés’ approach, turning a multicourse dinner into something closer to culinary performance.
Restaurant Guy Savoy at Caesars Palace also earned a star. The elegant French restaurant remains unapologetically classic, with tasting and à la carte menus, an extraordinary wine program and signatures including Savoy’s celebrated artichoke and black truffle soup with toasted mushroom brioche.
At MGM Grand, L’Atelier de Joël Robuchon earned One MICHELIN Star for its contemporary French cooking. Its counter-oriented dining room offers a closer look at the kitchen in action, with dishes ranging from scallops and black-truffle preparations to the late Joël Robuchon’s famously silky pommes purée.

The Bib Gourmands May Be the Most Useful Part of the List
Michelin stars naturally get the attention, but the new guide also recognizes restaurants where exceptional cooking doesn’t require committing to a major tasting-menu bill.
Three Las Vegas restaurants received the Bib Gourmand, Michelin’s distinction for restaurants offering particularly good food at a good value:
- China Poblano at The Cosmopolitan of Las Vegas
- Esther’s Kitchen in the Arts District
- YEN Viet Kitchen on Decatur Boulevard
The choEsther’s Kitchen ices also say something interesting about the city’s evolution. Michelin isn’t treating Las Vegas solely as a collection of celebrity-chef dining rooms inside casinos. Esther’s Kitchen and YEN Viet Kitchen bring independent, off-Strip Las Vegas into the conversation, while China Poblano represents José Andrés’ playful collision of Chinese and Mexican culinary traditions.
17 More Las Vegas Restaurants Make Michelin’s Recommended List
Beyond the starred restaurants and Bib Gourmands, Michelin selected another 17 Las Vegas restaurants for its Recommended category:

That list is arguably where the breadth of Las Vegas dining becomes most apparent. French, Korean steakhouse, Greek seafood, Indian, Japanese omakase, Thai, Chinese, Vietnamese and barbecue all appear in the mix, with restaurants scattered well beyond Las Vegas Boulevard.
Las Vegas Also Takes Michelin’s Service Award
The evening brought another distinction to the city. Sean Christopher of Restaurant de Joël Robuchon received the 2026 MICHELIN Guide Southwest Service Award.
Michelin highlighted the restaurant’s unusually elaborate approach to hospitality, where the experience can include everything from its striking butter presentation to carts filled with breads, cheeses and sweets. It is an appropriate award for a city where hospitality has always been nearly as important as what arrives on the plate.
One Star Outside Nevada
Only one Michelin-starred restaurant in the new Southwest guide is located outside Las Vegas. Monte in South Salt Lake, Utah, received One MICHELIN Star, becoming Utah’s first Michelin-starred restaurant.
Located inside Beehive Distilling, chef Martín Babio’s restaurant offers a tasting menu incorporating local producers with French, Italian and South American influences.
No restaurants in Arizona or New Mexico received Michelin stars in this first edition, although both states were well represented among the Bib Gourmand and Recommended selections.
Michelin’s Return Is a Very Different Las Vegas Story
Michelin first published a Las Vegas guide in 2008, followed by another edition in 2009 before leaving the market. At the time, Michelin recognition centered heavily on the Strip’s spectacular fine-dining imports and celebrity chefs.
Those restaurants remain important. The return of Joël Robuchon, Guy Savoy and L’Atelier de Joël Robuchon to Michelin-starred status proves that some of Las Vegas’ established dining institutions continue to perform at an international level.
But the 2026 list also reflects a city whose food culture has grown considerably beyond the resort corridor.
Restaurants including Esther’s Kitchen, Anima by Edo, Sparrow + Wolf, Partage, Lamaii, YEN Viet Kitchen and Pho Ga Bac Bac point toward the Las Vegas that locals have watched develop over the past decade: independent chefs, neighborhood dining rooms and an increasingly serious culinary community flourishing away from the Strip.
That may ultimately be the most interesting part of Michelin’s return. Las Vegas no longer has to prove that it can import world-class restaurants. The city is increasingly producing a dining identity of its own.
