Las Vegas continues to evolve as a serious food city, and much of that shift is happening off the Strip. In the Arts District, where independent restaurants have been quietly building loyal followings, two chefs are now getting national recognition for work that regular diners have been noticing for some time.

Chef de Cuisine Jackson Stamper of Ada’s and Executive Chef Dylan Jobsz of Esther’s Kitchen and  have been named Rising Stars by StarChefs. The recognition comes as part of the publication’s current Las Vegas-focused issue, where a small group of chefs and hospitality professionals are selected after an extensive evaluation process.

Both chefs will be honored this evening at an awards reception at Wynn Las Vegas, a setting that underscores the growing national attention on the city’s culinary scene.

StarChefs approaches its Rising Stars program with a level of scrutiny that goes well beyond surface-level recognition. Over the course of several months, its team conducts in-depth interviews, tastings, and on-site visits across a given market. From that process, roughly 18 to 24 professionals are selected, representing what the organization identifies as the future of American culinary talent.

The criteria extend beyond technical skill. Honorees are evaluated on leadership, innovation, and their ability to influence the broader hospitality community. Particular attention is given to chefs who prioritize mentorship and collaboration, shaping not only their menus but also the teams and kitchens around them.

Both Jobsz and Stamper are part of James Trees’ Timeless Hospitality portfolio, a group of restaurants that has played a key role in defining the Arts District’s dining identity. Each chef has worked alongside Trees for several years, contributing across multiple concepts while continuing to refine the direction of their respective kitchens.

Trees credits both chefs with helping drive the evolution of the restaurants, pointing to their consistency, leadership, and creative input as central to their ongoing success.

That experience is reflected in their backgrounds. Between them, Jobsz and Stamper have worked in major culinary markets including New York, Los Angeles, and Philadelphia before establishing themselves in Las Vegas. Those years in demanding kitchens have translated into a level of discipline and clarity that carries through in their current roles.

At Esther’s Kitchen, Jobsz oversees a menu that remains rooted in seasonality and technique, with a focus on housemade pastas and ingredient-driven dishes that reflect the restaurant’s established identity. The approach is measured and consistent, allowing the menu to evolve without losing its foundation.

At Ada’s, Stamper leads a kitchen that takes a slightly more refined approach while maintaining a sense of balance and restraint. The focus is on thoughtful composition and execution, with dishes that emphasize precision without becoming overly complicated.

Both restaurants have already built strong reputations within the Arts District, and this latest recognition adds to a growing list of accolades for the area. More broadly, it reflects a shift in how Las Vegas is being viewed by the national culinary community, with increased attention on chefs and restaurants operating outside the traditional resort model.

The Rising Stars designation does not hinge on a single moment. It reflects sustained performance, leadership within a kitchen, and a clear point of view that resonates over time.

For Jobsz and Stamper, the recognition formalizes what their work has already demonstrated.
