Guests feasted on a next-level family-style menu curated by Michelin-starred chef Jason McLeod, featuring standout dishes like charred octopus with guajillo and lime aioli, carne asada with chili butter and chimichurri, and a Frozen Pineapple dessert layered with whipped sorbet, mango, passionfruit, and caramel. Just when things couldn’t get any sweeter, Freed’s Bakery rolled out a custom cake for the couple to celebrate the upcoming arrival of their baby boy. A surprise unveiling of custom art by New York pop artist Jeremy Wolff honored Aoki’s cover moment, followed by a luxe toast of Louis XIII cognac in his honor.
It all unfolded inside one of the most buzzed-about new restaurants on the Strip. Amaya Modern Mexican, located on the second floor of The Cosmopolitan, reimagines modern Mexican cuisine with dishes like Birria Short Rib with corn purée and cotija, and the dramatic Amaya’s Surf & Turf, a three-part showstopper featuring Wagyu filet, dry-aged New York steak, and chili lime butter lobster tail. The drink menu? Equally impressive, with an extraordinary selection of aged tequilas and mezcals that pay homage to Jalisco’s multi-generational heritage.
The restaurant’s space, designed by Peter Max Bowden and his team at Petermax Co., evokes the rustic elegance and lush, tree-canopied tropics of the Yucatán. It’s a sultry, stylish escape that reflects Clique Hospitality and Gen3 Hospitality’s shared vision to bring something fresh and exciting to the Las Vegas dining scene. Amaya is open daily for lunch, dinner, and weekend brunch, with hours ranging from 10 a.m. to 11 p.m. depending on the day.
