In celebration of the dazzling fields, 20|Twenty, the onsite restaurant at the Westin Carlsbad, has crafted a new dish and cocktails paying homage to the neighboring attraction. Mixologist, Steve George, has designed a deliciously floral Lavender Blossom Fizz Cocktail with Venom Vodka, lavender-infused syrup, lemon juice, topped sparkling wine, and orange blossom water spritz, as well as a refreshing Hibiscus Sour Cocktail, made with Cali Fino Blanco Tequila, grapefruit juice, aquafaba, splash of lemon juice, agave nectar, bitter-hibiscus syrup, and lemon twist – both inspired by the brilliance and beauty of the flowers.
To nibble on, Chef Julian Quinones, has created a limited-time Hibiscus Baja Ceviche made with Local Striped Bass, avocado, cucumber, citrus, tomato, plantain chips, and hibiscus. The Hibiscus Sour cocktail can also be enjoyed at the Cassara lobby bar overlooking the vast fields in bloom.
