International Cuisine at its Finest
The impressive list of restaurants and their respective chefs who inspired them deserve to be mentioned in their own special article. No matter what cuisine your palette is craving, you never have to leave The Palazzo. For the true Italian food lover, you’ll find a selection of homemade pastas, regional cheeses, and some of the finest Balsamic vinegars at the CarneVino. The creation of this unique Italian-style steakhouse, is by combining the minds of celebrity chef Mario Batali, and winemaker Joe Bastianich who hand picked the selection of wines himself. Fiorenzo Trunzo who brought us one of the world’s leading luxury cars, the Lamborghini, has now introduced the same type of luxury to indulge another basic pleasure with Dal Toro, traditional Italian food with a décor that includes 100 feet of marbled mosaic Italian Palladian fountains to satisfy your visual senses.
Wolfgang Puck has done it again with CUT, a steakhouse where the terms “fresh” and “all natural” leave no question as to why it’s been acknowledged by such publications as Wine Spectator and Esquire. Scott Linquist brings a modernized Mexican flavor to The Palazzo with Dos Caminos, where you can choose from over 150 different types of Premium Tequilas; who knew there were so many! Eric Bauer created Morels French Steakhouse and Bistro, where the high class of food is complemented by patio views of the Vegas strip with a natural sunlit dining room where you can spoil yourself with more than 60 boutique wines by the glass and over 50 different types of cheeses, one of the largest varieties on a single menu. Emeril Lagasse brings New Orleans to Las Vegas with his third restaurant, Table 10, and Restaurant Charlie by Charlie Trotter who is known for using mostly organic produce and line-caught fish.

By the celebrated chef Simon To is the restaurant Jade, dim sum and Asian noodle dishes with a rare combination of cooking styles that includes Szechuan, Cantonese, Taiwanese, and Vietnamese. Another result of a unique combination of flavors is Sushisamba, with a hard to forget menu that includes both tradition and a creative flare from Japan, Peru and Brazil. With too many to mention, if you are still having a hard time deciding what to eat, believe it or not, you still have a few more options. There is a classic noodle house called Mainland, and Woo, a restaurant with an inventive feel by Ming See and Peter Woo, fusion Chinese cuisine with a merging of Japanese and California elements. There is also the Grand Lux Café with more than 150 dishes and 20 desserts; and an out of the ordinary traditional bar food menu at the 40/40 Club by Jay Z.
World Class Spa ~ Canyon Ranch
The Canyon Ranch Spa Club redefines what it means to be pampered with a true panacea of services. To complete your rejuvenation experience, you can nurture your body at any time of the day whether it’s breakfast, lunch or dinner at the Canyon Ranch Grill. James Boyer created a comfortable, casual dining atmosphere serving specialty cocktails made with organic juices and spirits, organic beers and wines in their own environmentally conscious category that are organic, biodynamic and sustainable.

Business As Usual
As one of the newer additions to the famed Las Vegas strip, The Palazzo is built by The Las Vegas Sands Corporation, located next to its sister hotel, The Venetian Hotel Resort and Casino. With 2.25 million square feet of convention space and close to 300 meeting rooms, conference rooms and boardrooms; combined with The Venetian and Sands Expo and Convention Center, it is now the largest hotel and convention complex in the world, more than in the entire cities of San Francisco, San Diego, and Phoenix combined. It seems as though with each new hotel that opens in this original Mecca in the desert, the restaurants, shops, décor and amenities in The Palazzo Las Vegas supersedes those before it.
Leading the way to a Greener Las Vegas
In April of 2008, The Palazzo Las Vegas made history as the largest building project in the world to receive a Leadership in Energy and Environmental Design, or LEED, certificate from the U.S. Building Council. Bravo!
